Carrots which are a tasty, crunchy and highly nutritive is one of the vegetables that is very well-loved given their flavour and texture. They’re most famous for being rich in vitamin A but are also a source of folate, vitamin C, B6, and K, as well as potassium, thiamine, fiber, and biotin.

Carrots are more than a tasty addition to almost any dish. They are also good for the body’s overall health, especially that of the skin, eyes, digestive system and teeth. Carrots kill harmful germs in the mouth and helps prevent tooth decay. Carrots are rich in carotenoids, which our bodies can use to help regulate blood sugar and are also high in soluble fiber. They are also rich in beta-carotene, which is converted into vitamin A in the liver; the Vitamin A is transformed in the retina, to rhodopsin, a purple pigment necessary for night vision. Carrots are a powerful antiseptic used to prevent infections which can be used on cuts and are used as an inexpensive and very convenient facial mask.

More importantly, carrots are amazingly nutritious and healing by themselves. Extracting carrot juice is highly beneficial to the liver and it’s comparable to blood transfusion from plant to human body. Carrot juice is very effective in correcting chronic infections such as tonsillitis, colitis and appendicitis. It has also been used in the treatment of anaemia, blood poisoning, ulcers, rheumatism, acne and all forms of cancer. Raw carrots probably offer more bio-available carotene because they are hardy, and can maintain their freshness longer than many vegetables.

Tola Atinmo, president, International Federation of Nutrition Societies, said that carrots are one of the popular root vegetables, notably rich in health-benefiting compounds such as beta-carotenes, Vitamin A, minerals and poly-acetylene antioxidant falcarinol, which help to fight cancer.

Tabitha Ahmadu, a nutritionist with the Ministry of Science and Technology in Kaduna, has advised Nigerians to ensure that they have more carrots in their daily diet so as to enhance good healthy living. She said that carrots improve vision and transform the retina. According to her, carrots are rich in vitamin A which assists the liver in flushing out toxins from the body. “Carrots help in the growth and development of bones and it is good for pregnant and lactating mothers. They relieve fatigue and gives appetite, it relieves stress when taken as juice and it is good for smokers, because nicotine in cigarettes destroy all the supplies of vitamin C in the body,” she said.

Ahmadu said that daily consumption of carrots helps in preventing gastric ulcer and digestive disorder. She added that carrots also help to prevent cancer, such as breast and colon cancers, as well as regulate sugar in the blood, adding that it is very rich in antioxidant and cleans the cells of toxins and impurities in the body. According to her, daily consumption of carrot helps in purifying the blood because as it is rich in alkaline, it improves the quality of breast milk in mothers and helps to reduce blood clots and heart disease.
